:Nothing Like TomatoesBSy Angie Bridgeseptember is a month of abundance-gardens are overflowing, theFarmers markets are a bustle of activity, and I am here for all of it (Except the extreme heat index, but I digress.)For me, it is all about the great produce. The heirloom tomatoes, squash, and bell peppers. The latter had me thinking of a favorite dish of mine growing up (and still is) that just reminds me so much of summer called “Pipirrana.” This dish is believed to have been invented by field workers in the south of Spain like Andalucía and La Mancha where my family is from. This is one of the most traditional versions as each region has its own spin. We always eat it with crusty bread to soak up the delicious juices. In keeping with the “no oven” dinners during this heat, we also toast our bread inthe air fryer. Brilliant!This is a refreshing and nutritious saladthat is also super easy to prepare making it a no-brainer for a weekend leisurely lunch or dinner and I hope you try it.Ciao for Now, AngieSpanish Style Tomato Salad“Pipirrana”You’ll Need: 1 English cucumber, halved lengthwise seeded and cut into half-moons, 11⁄2 lbs. ripe tomatoes cut into medium pieces, 1 small red onion halved and thinly sliced, 1 large red (or any color) bell pepper cut into medium pieces,1 clove garlic, minced fine, 1⁄4 cup drained capers, 3 hard- boiled eggs, peeled and cut into quarters, 2 (5 0z.) cans of tuna packed in olive oil, drained (or straight from pouch), 1⁄4 cup sherry vinegar, 1⁄2 cup olive oil, salt & pepperto taste, finely chopped parsley and crusty French bread.Directions: In a small bowl first combine the sherry vinegar and a pinch of salt. Toss in the onion slices and set aside. In a larger bowl, toss the tomatoes, cucumber, garlic and 1 tsp. salt. Let both sit about 10 minutes. After, on your serving platter, place the tomato mixture leaving out any juices that accumulated in the bowl. Take the sliced onions out of the bowl but reserve the vinegar. Scatter the onions on top of tomato mixture, toss capers on and flake the tuna over the top. To the reserved vinegar, whisk in the olive oil and salt & pepper to taste.
